Rewrite documentation

This merge requests reorganises the content into a usable structure for end users.

This was needed to prepare a clean slate for writing.

To fix #1 and to address web#71, we introduce

  • an exemplary list of available software and infrastructure
  • a collection of common use cases
  • simple explanations for the above
  • a page about email settings
